No Bake Vanilla Cheesecake.

Ingredients:

8 DIGESTIVE BISCUITS

8 LOTUS BISCOFF BISCUITS

30G BUTTER OR COCONUT OIL

500G FAT FREE QUARK

200G LOW FAT CREAM CHEESE

20ML VANILLA ESSENCE

12G SACHET OF GELATINE

Method:

1. Crush the biscuits and mix with the melted butter/oil. Press into the base of a 20cm springform tin. Chill to firm.

2. Add 50ml boiling water to the gelatine and stir until crystals have dissolved and set to one side to cool slightly.

3. Whisk the light soft cheese with the quark and vanilla essence.

4. Whisk in the gelatine mix until smooth. Spoon the mixture over the biscuit base and chill until set.

5. Once set slice into 8 equal pieces and serve either on its own or topped with berries, grated dark chocolate, chopped nuts or any other topping of your choice.

Notes:

You can change up the biscuit base; lotus biscuits, Oreos or ginger nuts work really well.

Fancy a different flavour? Add the zest of 1 lemon to the cheesecake mix for a zesty lemon flavour, or mix in berries for a summer fruits cheesecake.
